Learn How To Make Haitian Sweet Potato Pudding
Did Someone say pain patate?! I have to tell you, that this dessert is one I love, love, love! Growing up with grand-mothers who really enjoyed cooking and baking, I tasted a variety of Haitian delectable. Sweet potato bread pudding, or ‘pain patate’ [pen patat] is one that will always remain a favorite dish from my maternal and paternal grand-mothers. They both love greeting me with a sweet surprise of pen patat [pain patate].
Easy enough, but there was a lot of effort that went into making pain patate, from grocery shopping and manually grating the boniatas (real sweet potatoes) to putting together the recipe. So when I got the privilege of such goodness once or twice a year, it is always worth it.

COOK 1 HR 30 MINS
SERVINGS 8-10 UNITS US
2 lbs white sweet potatoes
1 large banana, peeled and cut in one-inch pieces
1 cup brown sugar
1⁄2 cup seedless raisin
1 teaspoon grated ginger-root
1⁄4 teaspoon salt
12 ounces evaporated milk
1 teaspoon vanilla extract
1⁄2 teaspoon grated nutmeg
1 teaspoon ground cinnamon
rind of one lemon, grated
1 1⁄2 cups coconut milk
3 tablespoons butter, melted
Preheat oven to 375 degrees.
Grate the sweet potatoes into mixing bowl and mash the banana into the sweet potatoes.
Mix in all ingredients, one at a time, until each ingredient is fully blended into the mix.
Spread evenly into a 9 x 13 inch baking pan.
Bake for 90 minutes or until toothpick inserted into center comes out clean.
Let cool 10 minutes. Serve hot. For an added treat, top with whipped cream :-p.
